Banana Muffins (Baby Friendly)

These banana muffins are packed with whole foods & natural sweeteners. A great snack for you to enjoy with your little one.

Ingredients:

¾ cup cottage cheese

2 large eggs (or substitute for egg whites)

¼ cup maple syrup

2 tsp vanilla

1 to 2 ripe bananas (1 large or 2 small)

¼ cup olive oil or avocado oil

1 ¾ cups oat flour

1 ½ tsp baking powder

½ tsp baking soda

1 tsp cinnamon

¼ tsp salt

** you can add in chocolate chips if you’d like, or any other mix in **

Directions:

  1. Preheat oven to 350 & line a muffin tin

  2. Add all ingredients to a blender and blend until combined (if you are making your own oat flour from rolled oats, please do this first before adding all ingredients in) * Do not add chocolate chips into the blender - add those after

  3. Divide the batter evenly - makes 12 muffins!

  4. Bake for 25 minutes & Enjoy!

Notes:

These can be kept in the freezer & reheated for a later day!
